Status Update on Coop & Life

The coop is coming along nicely. I have finally conceded that for it to be built and not be a become a Thing of Doom, I need to just help out already and stop trying to hide from all that construction. This acceptance has improved things greatly, but it also meant that writing got shoved waaaay to the back of life last week (as evidenced in my to-do list below). Now that the coop is almost done, I am going to re-focus on writing because frankly, I just feel better when that's my main focus and when it's getting done.
I also made carrot cake this weekend which was surprisingly delicious. Well. Considering I personally hate carrot cake. :P But that's why I wanted to tackle it for Cake Month, to see if I could make a version I personally enjoyed while other carrot cake aficionados still found it pleasant. Considering it was Lora's favorite kind of cake and she enjoyed my version, I'll take that as a passing grade. I'm bringing the other half of the cake to work today and not mentioning that it's gluten free, so we'll see if it passes on that end of things.

Next weekend is almond cake! Which on the one hand should be less difficult, because it has way less ingredients, but on the other hand will need to be a more contained cake. I'm thinking bundt cake with chocolate ganache layered frosting right now, sort of a marriage between these two cakes: matcha almond and red velvet bundt.
And now it's time for some TO-DO LISTS. Because that's what the beginning of the week is all about. Happy 12th of August!
